NAVETTE D'ALBI







3 eggs – 200g + 50g of caster sugar – the juice and zest of 1 lemon (optional) – 300g of flour – a pinch of salt – 50 almonds (with skin on) – 30g of melted butter.

Preheat the oven to 210° C.
Beat the eggs in a bowl with the sugar, salt, lemon and zest. Combine well.
While stirring, add slowly the flour and the butter.
Butter and flour a round tin.
Pour in the mixture and place the almond on the top.
Drizzle with the remaining sugar.
Bake for 20-25 minutes.
Albigeois (people from Albi), dip this navette in sweet wine…



Created in XVIIIe century, this cake is a tribute to the Cathars, who used to live in Albi.
