Supersonic and terribly easy menu for your Valentine ?
(maybe, maybe not...).
HALIBUT FILLET IN A SPÉCULOOS CRUST – GREEN BEANS WITH LIME BUTTER
2 pieces halibut fillet skin removed (or any white fish)
2 tbsp of sunflower oil
7 spéculoos biscuits
1 tbsp of mustard
The juice of a half a lemon
The juice of half a lime
The zest of 1 lime
250g of
fresh green beans
100g of
salted butter
Put the butter in a
bowl and leave at room temperature until it is soft enough to work.
Pre-heat your oven
to 210°.
With a hand
blender, smooth blitz the spéculoos with the mustard, lime juice and oil.
Coat each fillet
with the spéculoos preparation.
Cook for 15
minutes.
Meanwhile, take the
soften butter and add the zest and lime juice.
Mix to combine
thoroughly.
Put the butter
mixture on to a large square of cling film.
Shape into a log, and
roll the mixture up in the film, twisting the ends.
Refrigerate until firm.

Boil water for the
beans and cook for 10 minutes.
For the butter, remove
wrap and slice into rounds.
Serve the halibut
with the beans and lime butter.
