Or cook your lamb simply and serve it with a figs jam or an apricot chutney ? A little bit more sophisticated if you rub it in ground pistachio and served it accompanied by a leek or spinach flan ? Hello Pearl, Of course. But which one ? I love salted ones. What about Parmesan or soft goat cheese ice-cream ? They go perfectly well with the strong sweet touch of the fruit salads. You can use as well a "trou Normand" (a palate cleanser in French): Go for a "Pastis-Ricard" granite or a Calvados Sorbet. (a Sauternes sorbet would add another sweet touch, but maybe you would like it...). In a classic way, I would recommend a rhubarb sorbet or a dark and lovely blueberry sorbet. Hi Pearl. We would go for a granite then as a sorbet needs to churn.... For around 5 people : 30cl of calvados – 70g of brown caster sugar – 20cl of water – the juice of ½ a lemon.
In a small saucepan, boil the sugar with the water. Leave it to cool then add the Calvados and the lemon juice. Place the mixture in a shallow container that can be put in the freezer. Freeze for at least 3 hours. Stir every 30 minutes with a fork. Serve in small shot glasses. Enjoy! Sixte
